Yanfeng Brewing Technology Listed in the Intangible Cultural Heritage Directory of Hengyang

Recently, Hengyang government announced the second batch of municipal level intangible cultural heritage directory, Yanfeng brewing technology was listed. Thus, following its successful appraisal as a modern and contemporary industrial heritage protection unit, Yanfeng Liquor Industry won another special honor.

 

Yanfeng liquor brewing technology is a kind of traditional brewing technique. From raw materials to finished products, its operation covers thirty procedures, and most of these procedures rely on visual observation, nostril smelling, tasting, and hand touching, and it is a mind of technology formed after hundred years of long-term practice and oral transmission.  

 

The present Yanfeng brewing technique has maintained completely not only such traditional brewing technology, such as “meibansuiliang”, “dagengtanliang”, “huimashangzeng”, “kanhuazhaijiu”, “laowuzeng”, etc. that are characterized with unique charm, but also continually improved such techniques as low-temperature slow fermentation, segmentational liquor picking, and vessel assorting for storage according to quality, and coupled with the 50-year old pit clusters that are enriched with various kinds of brewing beneficial bacteria, it has also brought up the characteristics of various kinds of compound fragrance, such as basic wine cellar fragrance, the trough fragrance, and yeast fragrance etc., and the outstanding quality of Yanfeng liquor, gaining therefore extensive favorable comments from the public.
